Chocolate Pudding with a Twist!

AVOCADO CHOCOLATE PUDDING

SERVES 4

INGREDIENTS:

2 Ripe avocados, pitted and peeled

¼ Cup raw cacao powder

7 Tablespoons pure maple syrup

¼ Cup unsweetened almond milk or milk of choice (if you use sweetened non-dairy milk, cut back on the maple syrup)

Splash of pure vanilla extract

Pinch of sea salt

DIRECTIONS:

  1. Blend all ingredients in a food processor or high-powered blender until smooth and creamy. Very nice topped with crunchy bits like toasted coconut or cacao nibs or granola; or juicy berries.

Lasts for up to 5 days in the refrigerator. 

You can also do a Mexican chocolate version by adding a pinch of ground cinnamon and a pinch of cayenne.

Being transported to another time and place is a luxury we wish we had every day of the week. Seeing as we’re not plane hopping and jet setting anytime soon we have to do what we can with what we have for the time being. Sure it's frustrating at times and there’s no doubt we experience the ups and downs as they may come, but we think there are special as well as delicious ways to create our own personal oasis.

Let us introduce you to the dish that makes it all possible, the Avocado Chocolate Pudding. Something about being in your home with family and cooking a special dish together somehow makes the ingredients taste richer, sweeter and brighter. We like to enjoy this dish on a summer evening with our loved ones before we sit down to watch our favorite Fred Astaire, old Hollywood flick. Before we sit down and fight over the softest blanket and the last spot on the feather down sectional, we head to our cupboard to grab ingredients to make our favorite sweet treat.

We head to the kitchen and grab some of our key ingredients: avocado, cacao powder and vanilla extract. These flavors are what make this pudding taste both rich and sweet and give this dessert the smoothness that melts in your mouth. There’s no better way to bring people together than by cramming in the kitchen and fighting over who gets to lick the blender after mixing the five simple ingredients together.

After preparing our refreshing dessert that literally took minutes we reach for a set of four Juliska Berry & Thread white ceramic bowls. Of course our dishes have to complement the rich brown of the pudding as well as the pop of red from our juicy, ripe berries that we sprinkle on top. Tonight we’re surrounded by family, laughter and comfort as we devour what took us minutes to make in mere seconds.

We sing along to Fred and Audrey as they play cat and mouse in Funny Face and trade looks that suggest we all want seconds of our rich but light pudding. It’s back to the kitchen to whip up another round of this sweet treat and then a second attempt to finish our feel good film.

It’s evenings like these that can make you forget all that isn’t perfect in this world, and when you’re surrounded by family and food like this everything is just a little sweeter.
